Hedysarum hedysaroides   Alpine Sainfoin

Hedysarum hedysaroides whole Hedysarum hedysaroides close

Also known as Alpine French Honeysuckle, the roots of this plant can be eaten raw or cooked. However the snag is that there are other quite similar species in this genus which are apt to give severe digestive problems so accurate identification is necessary for the wild food forager. It will grow in Northern Alaska as well as European mountains where it is known as Indian Potato.

It is not uncommon in the Swiss Alps and thrives up to about 10,000 feet.
